- 2 medium zucchini
- 250 gr of rice
- 1 liter of chicken broth
- 1 onion
- Chopped parsley
- Grated Parmesan cheese (optional)
- 3 garlic cloves
1- Wash the zucchini and slice them lengthwise. Reserve them.
2- Chop the garlic cloves and onion. Bring them to the fire in a pan with a little oil to sauté.
3- When they are sautéed, add the zucchini, the chopped parsley and the rice. Stir until done.
4- Pour half a liter of the chicken broth and cook for about 20 minutes, adding more broth as the water is consumed, until the rice is done.
5- If you wish, before cooking is finished, add the grated cheese, and if necessary, correct the salt.
